How do we celebrate getting braces off? With caramel popcorn and other gooey delights that are prohibited for two years. This recipe is a family favorite. It tastes better when it cools and hardens, but we can hardly ever wait!
We copy recipes passed on by friends onto large index cards. We write the year and friend’s name so we’ll remember through the years. This beloved treat came from the kitchen of our friend Pam Gaddis several years ago.
5 quarts popped popcorn. Tastes better if you use real, fresh popcorn and cook on the stove instead of the microwaved stuff.
Stir in medium pot together:
1 cup butter, melted
2 cups brown sugar
1/2 cup light corn syrup
1 tsp salt
Stir above ingredients constantly, boiling for 5 minutes
In a few minutes, you’ll add:
1 tsp vanilla
1 tsp baking soda
Remove from heat and stir in 1 tsp baking soda & 1 tsp vanilla. Keep stirring, and your caramel will begin to poof up! So fun to watch, but careful not to touch. It it sticky and will burn intensely if it touches your skin.
Stir well until baking soda and vanilla are mixed in well, then carefully pour over popcorn.
Stir the caramel into the popcorn, quickly and thoroughly. Be sure to stir up popcorn from the bottom of bowl to evenly coat it. Caramel deliciousness!
Pour onto a cookie sheet sprayed lightly with Pam. Then let cool, break apart, and enjoy. (If you can wait that long!)
